The Lawson Lab recently had a paper published in Nutrition & Metabolism. The paper, “Dietary iron interacts with genetic background to influence glucose homeostasis,” shows the importance of accounting for genetic variation when assessing the effects of diet on metabolic health. It also suggests that dietary iron’s impact on liver and adipose tissue is an underappreciated component of metabolic disease risk.
